This December I’ll be in residency at The Canteen in Southwold, Suffolk. The Canteen is part of The Old Hospital, a community space and library just behind the beautiful St Edmund’s Church. It’s a great space run by Nicola Hordern, who I used to work alongside in the kitchen at Quo Vadis in London. She also ran the kitchen at Darsham Nurseries, just down the road from Southwold. I love Southwold this time of year, it’s a bit quieter but you get lovely blue skies, and lots of great cobweb-blowing walking. As part of my cooking residency in Southwold I’ll be serving up breakfast and lunches from Wednesdays through to Saturday – expect plenty of bone-warming December fare, including some of the following:
Pear, Binham Blue and walnut salad
Brawn, mustard fruits and cornichons
Pork and venison meatballs, fried polentan and parmesan
White bean and cavolo nero stew, roast pumpkin and chestnuts
Rum baba, clementine and cream
Monte Bianco
